White Chocolate Cranberry Cookies

I made these cookies tonight and they were really good! Nice change up from chocolate chip or sugar cookies.

Enjoy!

White Chocolate Cranberry Cookies

3/4 cup butter or margarine, softened
3/4 cup packed light brown sugar
1/2 granulated sugar
2 teaspoons vanilla
1 egg
1 3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup white chocolate chips
1 cup dried cranberries

Heat oven to 350 degrees. In large bowl, beat butter, brown sugar, granulated sugar, vanilla, and egg with electric mixer on medium until well mixed. Stir in flour, baking soda and salt. Stir in white chocolate chips and cranberries. On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. Bake 12 to 15 mins or until light brown. Cool 2 to 30 mins before transferring to a cooling rack.
